Vegetable Handi is easy to make Indian curry that goes well with Rotis, rice and bread.

Ingredients
Vegetables diced and ready:
500g brinjal or eggplant
500g boiled potatoes diced
350g cauliflower
600g tomato puree ( tomatoes smoothly grounded)
250g yoghurt
3-5 bay leaves
1 tsp turmeric
1-2 tbsp chilli powder
1 tbsp Kasuri Methi
Oil
salt
Handi Masala
Grind the following spices to a semi-smooth consistency:
½ cup coriander seeds
3-5 dry chillies
2 tbsp black pepper
1 tbsp fennel seeds
1 tbsp cumin/jeera
1 tsp fenugreek seeds
1 tsp mace/javanthri

In a pan heat oil and add bay leaves and then add crushed ginger, garlic and onion paste and cook until the raw flavour goes away. Once done, add turmeric and chilli powder. Add tomato puree, mix well and cook till it dries off completely. Now add Kasturi Methi cook for another 5 mins.
Now add brinjal or eggplants and let it cook for a further 5-7 mins till it softens and then add cauliflower and followed by boiled and diced potato. Cover with a lid and let it cook on low flame for 8-10 minutes.
Mix some fresh yoghurt, salt, cooking cream if you wish and mix it well. Add this mixture to the gravy and stir well. Cook on low flame and sprinkle coriander leaves on top.
Serve with hot rice, rotis, chapatis and bread.
