Stuffed eggplants medallions: perfect for a quick dinner! Easy, quick and delicious, this is a great way to cook eggplant! 
 
INGREDIENTS
 1-2 eggplants
 Ham
 Green onion
 Carrot
 3 eggs
 1tbsp flour
 Salt
 Pepper
METHOD
1. Prepare 1 - 2 thick eggplants: remove the ends and cut them into thick slices. Soak in saltwater for 5 minutes.
2. Prepare a carrot and cut it into small pieces. Prepare a ham, cut into small pieces. Chop green onion. Put them all in a bowl for use.
3. Use a spoon to hollow out the eggplant. Cut the excavated eggplant into small pieces and put them into a bowl.
4. Add 3 eggs to the bowl and mix well. Add an appropriate amount of salt and pepper, and finally, add 1 spoonful of flour and mix well.
5. Put the eggplant circle on the pan. Put the batter in the eggplant circle (do not put it too full). Repeat the face, fry until both sides of the golden, the whole process needs to be 4 minutes.
